White Chocolate Macadamia Nut Baked Oats

Want to go to Hawaii? Me too! This tropical flavor combination is superior to all, and in a fluffy, baked oatmeal/cake form, it becomes the most filling and irresistible breakfast! They take less than 30 minutes to make, and feature a secret ingredient that should be a sin, but I'm not gonna consider it one, because it simply elevated this already amazing breakfast! Drum roll please....CHICKPEAS! I wouldn't include them in this recipe if you could taste them, because that would just be gross. Their soul purpose is to fluffify this warm bowl of baked oats! Now that that's out of the way, lets go make them!

 

YIELD: 1 serving

TIME: 25 mins.


Ingredients:

- 2/3 cups rolled oats

- 1/2 cup chickpeas (drained and rinsed)

- 1 tbsp organic brown sugar

- 1 tbsp almond butter

- 1/2 tsp cinnamon

- 1/2 tsp baking powder

- A pinch of sea salt

- 1/2 cup almond milk

- 2 tbsp white chocolate chips

- 1 tbsp macadamia nuts (chopped)

 

Instructions:

  1. Preheat your oven to 350 degrees F, and spray a large ramekin with cooking spray.

  2. Add all your ingredients to a blender, (except for the white chocolate chips, and the macadamia nuts). Blitz on high until smooth.

  3. Pour into your prepared baking dish, and top with the white chocolate chips, and macadamia nuts.

  4. Bake for about 20 minutes.

  5. Enjoy!!
