Chocolate Caramel Mug Cake

This mug cake is so decadent, fudgy, and rich! It screams Twix bar, with the homemade gooey caramel sauce planted in the middle of this moist fluffy chocolate cake! It's single-serve, and thank goodness it is, because this mug cake is probably one of the best one's I've ever posted on my blog! So I dare you to make it, since it couldn't be any simpler to make, and only requires minimal healthy ingredients that I KNOW you already have lying around in your pantry! This overflowing hug-in-a-mug is worth making, I promise!

YIELD: 1 serving

TIME: 10 mins.

Chocolate Cake Ingredients:

- 4 tbsp whole wheat flour

- 4 tbsp organic cane sugar

- 3 tbsp cocoa powder

- 1/4 tsp baking powder

- 1/4 tsp salt

- 1 egg (beaten)

- 3 tbsp almond milk

- 1 tbsp applesauce

- 4 tsp homemade caramel sauce

Caramel Sauce Ingredients:

- 8 medjool dates (pitted)

- 1/2 tsp sea salt

- 1/2 tsp vanilla extract

- 1/2 cup almond milk

Instructions:

  1. First we're going to make our caramel sauce. To do so, add all your ingredients to a blender, and blend until super smooth. Alternatively, you could use a food processor instead if that's what you have on hand.

  2. Store in a mason jar in the fridge while we make our chocolate mug cake.

  3. Mix all you chocolate mug cake ingredients in a small bowl (except the caramel sauce) until well combined.

  4. Pour the batter into a large mug.

  5. Add a dollop of caramel sauce to the center of the mug, and place the mug in the microwave to bake for 90 seconds, or until fully cooked.

  6. Enjoy!!
